Bourgogne Hautes Côtes de Beaune Blanc is made exclusively from the Chardonnay grape. The first sorting of the grapes already takes place at the time of picking and the second sorting takes place in the winery, which takes place by hand. The grapes are pressed in an air-driven press. The must is cooled and rests in the tank for 24-36 hours. Where after the alcoholic fermentation begins in the tank, but it is finished in French oak barrels. After the end of alcoholic fermentation, the malolactic fermentation is started, which naturally reduces the acidity in the wine. During the malolactic fermentation, stirring is carried out, which swirls up the sediment and gives fullness and complexity to the wine. After nine to eleven months in barrels, the wine is poured into tanks, where it ages for two to three months. The wine is clarified and filtered before bottling, which takes place during the period when the moon is waning. The fact that bottling takes place during this particular period adds extraordinary freshness and fruit to the wine.

About the Vinhuset:

Château de la Charrierè is located near the town of Santenay in the southern part of the Bourgogne district, Côte de Beaune. The domain's fields lie 250 meters above sea level and cover an area of 15 ha, where the soil is composed of lime and clay.

On the slope, 2.5 ha of the lands 100% are planted with Burgundy's "big" red wine grape, Pinot Noir. The vines have an average age of 35 years. The annual harvest yield is 50 hl per ha. The castle is owned by Yves Girardin, who is also responsible for the production.
