Fabiano Amarone Della Valpolicella Classico DOCG

Beautiful and full-bodied Amarone from Fabiano with cherries, prunes and smoke in both nose and mouth wrapped in soft tannins and sweet notes of vanilla and raisins, which continue into the long intensive aftertaste.

Fabiano Amarone Della Valpolicella Classico DOCG is then aged for three years in oak casks of different sizes, of which 10 months in small oak casks, before bottling.

Scent: Elegant with slightly spicy notes of oak and mocha that mix with a large concentration of ripe red fruit.
Taste: Dry and well-balanced with a very intense core of ripe fruit and a typically bitter finish..
Served for: red meat, grill dishes, game and cheese.
Serving temperature: 16-18º C.

Fabiano Amarone Della Valpolicella Classico DOCG is made from a combination of Corvina 65%, Rondinella 30% and Molinara 5%. Harvested at the beginning of October and only the very best bunches are selected for Amarone. The selected bunches are carefully placed in boxes that hold 6 kg. The boxes are placed in well-ventilated attics to allow the grapes to dry so that the must is concentrated.
When the concentration is achieved, in the second week of February, the grapes are pressed. The maceration lasts for 30 days, followed by the 30-day fermentation process that takes place at a low, controlled temperature of 14-15ºC.

About the Vinhuset:

Fabiano harvests his pigeons around the old village of Negrar di Valpolicella. Here, the fields are laid out on slopes that are 300 meters above sea level. The area is known to many Danes when the holiday is held east of Lake Garda. It is hilly and warm here and the soils here provide optimal conditions for the local grape varieties. Here, as elsewhere in Italy, the best wines are produced from grape varieties adapted to the microclimate. The soil consists of dry limestone resting on a hard subsoil of limestone, a well-drained and very fertile growing ground for the classic grape varieties of the Valpolicella district.

Fabiano is a family-owned producer and Nicola Fabiano himself is involved in the production of the house's wines. The style they adhere to is classic with a twist of modernism. Mostly large old casks, but in recent years there has been more experimentation with the use of small casks, which contributes to more sweetness and concentration in the house's wines.
