Cognac VSOP Grande Champagne Paul Giraud er i en flot kvalitet der viser noget af den kompleksitet man kan opleve i ung Grande champagne.
Scent: Frisk duft af orange blomst og frugt med noter af tørret abrikos og lidt honning.
Taste: Kraftfuld og meget fokuseret, igen med toner af tørret eksotisk frugt med en god mængde sødme fra fadlagringen der står helt klart i smagsindtrykket, men er flot balanceret i den lange eftersmag.
Cocktails: Sidecar – Syrlig og intens cocktail til enhver lejlighed:
3 cl. Paul Giraud V.S.O.P. + 3 CL. Cointreau + 3 cl. friskpresset citronsaft + 1 cl. sukkersirup.
Hæld ingredienserne sammen i en shaker med isterninger og ryst grundigt i ca. 10 sekunder. Si drinken over i et afkølet cocktailglas og server
Cognacen:
Druerne vinificeres til en vin med 8-10% alkohol der derefter destilleres i to pot stills fra hhv 1950 og 1962. Traditionerne holdes i hævd her på stedet. Vinen dobbeltdestilleres, første gang sur lie, på bundfaldet, for at give yderligere kompleksitet. En besværlig proces der kræver konstant overvågning. Cognacen lagres derefter på egetræsfade fremstillet af Limousin eg ved fuld styrke. Der bruges ca. 30% nye fade hvert år. En del af filosofien hos Paul Giraud er at man IKKE blander noget, heller ikke sin Cognac, derfor er de fleste produkter fra mandens hånd fra én enkelt årgang. Dette skrives ikke på etiket og beskrivelser, da det kræver speciel kontrol fra myndighederne der vil forringe Girauds kontrol med hans Cognac.
Smags mæssigt gennemgår en Cognac fra Grande Champagne en udvikling med alderen i fadet. Når de er unge er de mest florale, derefter gennemgår de en fase hvor det er frugten der er mest fremtrædende. Når Cognacen bliver meget gammel bliver frugt og blomst mere tilbagetrukne og så oplever man mere krydderi i glasset.
Giraud:
Jean Paul Giraud er en af de typer som virkelig brænder for sit håndværk. Manden er passioneret til fingerspidserne. Stilen i husets færdige Cognac er meget traditionel for Grande Champagne. Alle Cognacs er lagret betydelig længere end lovens minimumskrav.
Giraud owns 35 hectares of vineyards which supply the raw material for his Cognac, here planted with 95% Ugni Blanc and 5% Folle Blanche. All fields are located in the Grande Champagne sub-area. Cognac from here is entitled to the designation Premier Cru as the only district in Cognac. The soil here is very calcareous and produces very floral Cognacs that require a long aging to achieve the perfect. The vineyards are cultivated almost according to organic principles and are sprayed as gently as possible. As one of the few producers, Paul Giraud still gets all his grapes picked by hand, previously by Spanish workers, but today by the local farmers in the area.
